# Directions:
01 - Arrange eggs in a saucepan and cover with cold water. Bring to the boil, then reduce heat and simmer for 9 to 10 minutes.
02 - Transfer eggs to an ice bath and allow to cool for 5 minutes. Remove shells carefully.
03 - Slice eggs lengthwise. Remove yolks and set whites aside.
04 - Mash egg yolks in a mixing bowl with mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until creamy.
05 - Fold chopped smoked salmon and fresh chives into yolk mixture. Blend thoroughly.
06 - Pipe or spoon prepared filling into egg white halves, ensuring a smooth presentation.
07 - Sprinkle everything bagel seasoning atop filled eggs. Garnish with extra smoked salmon and dill as desired.
08 - Transfer to serving platter and chill thoroughly prior to serving.
