01 - 2 large English cucumbers, thinly sliced
02 - 4 radishes, thinly sliced (optional)
→ Cream Cheese Dressing
03 - 4 ounces cream cheese, softened
04 - 2 tablespoons plain Greek yogurt
05 - 1 tablespoon fresh lemon juice
06 - 1 teaspoon white wine vinegar
07 - 1 tablespoon chopped fresh dill
08 - 1 clove garlic, minced
09 - 1/4 teaspoon freshly ground black pepper
10 - 1/2 teaspoon kosher salt
→ Toppings
11 - 2 tablespoons everything bagel seasoning
# Directions:
01 - Rinse cucumbers and radishes. Using a sharp knife or mandoline, slice cucumbers and radishes as thinly as possible. Transfer the slices to a large mixing bowl and set aside.
02 - In a medium bowl, combine softened cream cheese, Greek yogurt, lemon juice, white wine vinegar, chopped dill, minced garlic, black pepper and kosher salt. Whisk vigorously until the mixture is smooth and homogenous.
03 - Pour the dressing over the sliced cucumbers and radishes and fold gently with a spatula or tongs until all pieces are evenly coated.
04 - Transfer the dressed cucumber mixture to a serving bowl or platter. Evenly sprinkle everything bagel seasoning over the top to finish.
05 - Serve immediately for maximum crispness, or refrigerate for up to 30 minutes to allow flavors to meld before serving.
